This stuffed acorn squash is the perfect blend of comfort food and healthy ingredients. Whether you’re using ground turkey or flavorful sausage, this recipe makes a satisfying, well-balanced meal that’s great for weeknights or sharing with friends.
Ingredients
- 1 medium acorn squash
- ½ lb ground turkey or sausage
- 1 cup chopped zucchini
- ½ small onion, diced
- 2 cloves garlic, minced
- ½ cup cooked quinoa (or barley, millet, farro, or rice)
- ½ cup shredded mozzarella cheese, divided
- ½ tsp kosher salt
- ½ tsp freshly ground black pepper
- ½ tsp dried sage
- • ½ tsp fresh rosemary or dried
- Olive oil
Instructions
- Preheat oven to 375°F. Halve squash lengthwise and scoop out seeds.
- Place cut-side down in a baking dish with 1/4″ hot water. Cover loosely with foil and roast 40 minutes, until tender.
- While roasting, heat olive oil in a large pan. Cook meat 5–7 min; drain and set aside. Sauté onion and zucchini 5–7 min, add garlic and cook 2–3 min until fragrant. Return meat to pan, stir in spices and 1/4 cup mozzarella.
- Fill squash halves with mixture (mound if needed). Cover with foil and bake 15–20 min, until heated through.
- Top with extra cheese if desired. Serve hot.
