We’ve had a lot of folks ask about our Mashed Potato Squash lately — and for good reason! You won’t often find these at the grocery store, but once you’ve tried them, you’ll be hooked. That’s why we grow dozens of plants here at Little Pistol Farms in Oshtemo, MI — so our neighbors and farmstand visitors can enjoy this unique and delicious squash.
What Is Mashed Potato Squash?
If you’re familiar with acorn squash, Mashed Potato squash looks very similar in shape and size. The big difference? It has smooth, creamy white flesh that cooks up fluffy and soft — so much like mashed potatoes that you might just do a double-take.
The flavor is mild with a subtle sweetness that pairs beautifully with simple seasonings like butter, salt, and pepper. It’s hearty, filling, and versatile — making it a hidden gem among fall produce.

How to Cook Mashed Potato Squash
Here are two easy, delicious ways to prepare it:
Roasted (our favorite method):
- Wash the squash well.
- Slice off the ends, cut in half lengthwise, and scoop out the seeds.
- Rub the flesh with olive oil, salt, and pepper.
- Place cut-side down on a baking sheet and roast at 400°F for 40–50 minutes.
- Scoop out the flesh and mash with butter, cream, or your favorite herbs.
Boiled & Mashed:
- Slice off the ends, cut in half lengthwise, and scoop out the seeds.
- Peel and cube the squash.
- Boil until tender (10–15 minutes), then drain.
- Mash with butter, garlic, or olive oil.
- Finish it off with chives, cheese, or even crispy bacon for a cozy side dish the whole family will love.
